Njaanuary strong! How to cook githeri with Tusker Premium Cider

This one is a hit. A Kenyan favourite. Githeri is the quintessential meal and can be enjoyed by bachelors, spinsters, friends and enemies. If you're having a party, this Tusker Premium Cider githeri recipe is a good one. In fact, a friend of mine said that he's paked this githeri in to a samosa with fantastic results! That's a story for another day but let's get in to it fast!

Oh, and by the way, this recipe can be adopted in infinite ways. You can add your own variants like sweet potatoes, pili pili hoho et cetera. It’s almost impossible to mess up a good round of githeri

Ingredients

- Cooking oil

- 1 onion, sliced

- 2 tomatoes, chopped

- 3 cloves of garlic, chopped

- 1 cup of soft maize pre-boiled

- 1 cup of beans, pre boiled

- 1 cup of peas

- 1 bottle of Tusker Premium Cider

- 2 beef cubes

- 2 bay leaves

- 1 fresh chopped rosemary

- ! fresh chopped dania

- 3 potatoes diced into half-pieces

- 3 carrots diced into half pieces

How to prepare

  • Add two tablespons of cooking oil to a sizeable sufuria over medium heat.
  • Add garlic and saute for 3 minutes.
  • Add the onions to cook for another 3 minutes.
  • Add the tomatoes and cook for another 3 minutes.
  • Add the maize, beans, beef cubes, bay leaves and half of the rosemary to the pan.
  • Add 1 bottle of Tusker Premium Cider
  • Let it boil then reduce heat with the lid on for about an 15 minutes, stirring occasionally.
  • Add the carrots and potatoes and then cook for another 30 minutes (or until everything becomes soft)
  • Add the peas and cook for a few more minutes.
  • Garnish with the remaining rosemary and dhania.
  • Season to taste with fresh pepper and salt.
