Growing up, chapati was one meal that used to bring my family together because my siblings couldn't afford to miss out on my mum's tender chapos.

The secret to a soft layered Kenyan chapati is the dough. Dough that is soft will always produce soft chapatis.

Chapati, commonly known as chapo, is common in Kenya and is usually served with chicken or beef stew and can even be taken on its own with some tea or juice.

If you are a girlfriend and you are struggling to cook for your man a great chapati, here is a recipe that will help you make a finger liking chapati for your man.

Follow the recipe below:

INGREDIENTS

  • 4 Cups of 'Unga wa ngano' all purpose flour.
  • Cooking oil (you can substitute with batter).
  • Salt to taste.
  • 1 cup of warm water for mixing the dough.
  • Extra margarine for layering, extra flour for dusting and sprinkling

INSTRUCTIONS

  •  In a bowl, mix together flour, salt, and margarine.
  •  Add water and knead the dough. Knead for 10-15 minutes or until the dough is super soft. Cover with a clean kitchen towel and rest for 30 minutes.
  •  After that, take a portion of dough in your palms (enough to fill your fist). Roll it out into a thin circle.
  •  Spread 1 tbsp cooking oil evenly and sprinkle some flour over it.
  • Now create the folds or rolls and set them aside for 10 seconds.
  •  Take one roll, sprinkle flour on the rolling surface and roll the dough into a circle of your desired thickness.
  • Heat the heavy pan- Heavy pans are better than light pans because they do not absorb excess heat.
  •  Cook for 30-45 seconds and once the air pockets start to form, flip it.
  • Use a spoon or spatula to press the sides down as you keep moving the chapati.
  • Use the same criteria to cook the rest of the rolls.
  • Serve straight away or if you are serving it much later, cover with a foil or place it in a bowl and cover it, then set aside. This will keep them from drying out and will stay soft.
