The Food That Pope Francis Should Have Tasted

Pope Francis was here last week, making headlines across the globe as it was his maiden visit to Africa. He visited the St. Joseph the Worker Parish in Kangemi as part of his itinerary. He stopped by because the regional headquarters of the African Jesuit Aids Network (AJAN) are located in the slum. The Jesuits network caters for orphans and people living with HIV/AIDS in 20 African countries. I'm thinking he should have stopped by a restaurant and eaten Ugali and Sukuma Wiki, our staple meal.

It's the most memorable thing he would have gotten from the country. Many international celebrities have said that Chapatis, Ugali and Sukuma Wiki are their favorites apart from the sandy beaches.

Sukuma Wiki only needs a sprinkle of Sima Mbili curry powder to achieve this status.

You can use it to prepare stews, veggie soup, as a marinade for nyama choma, to spice up salads, fish and more. Here’s how I do it – the recommended way. For every half kilo of veggies or meat, I add only two spoonfuls and my meal is ready to go. Recently I invited my former work colleague for lunch and you know what? She borrowed two sachets for use that evening!
